1 pound lean slab bacon.
2 1/2 cups water
salt.
1 pound fresh pears.
2 pounds fresh green beans, cut into 2 inch pieces
1 teaspoon chopped parsley.

How to Make.
In a large pot, combine bacon, water and 1/2 teaspoon salt. Cover and simmer 30 min.. Peel, quarter and core pears. Add pears to bacon mixture, cook 10 min.. Add beans. Cover and simmer 30 min. longer. Remove bacon from pan, cut into slices. Season cooked beans and pears with parsley, salt and pepper. Arrange bacon slices overtop. Serve with boiled potatoes.
Yield: Makes Four Servings.
Variation.
Leaf pairs whole and unpeeled. Add a peeled potato, cut in wedges.
